Description

Each wheel has deep yellow golden interior complimented with a grainy brittle texture. The deep full-bodied tang is both sweet and nutty, the creamy taste has hints of hazelnuts with a citrus tang. Dry jack originated in the 1950s when there was a need for a shelf stable cheese, since access to refrigeration was limited. As the wheels age, the cheese texture becomes drier, giving it a texture similar to Parmesan. It is an excellent choice for grating over salads, pasta and soups, and a wonderful snack.
